
Jaggery Sugar
Jaggery is also known as Hakuru in Sri Lanka and is a traditional,unrefined sugar made from the sap of the Kitul Tree. The Process of making Jaggery goes back over 2500 years, and the technique has changed little in that time.
Not only is Jaggery a healthy alternative to sugar, its a primary ingredient in its own right. Many Sri Lankan and South Indian recipes call for Jaggery as their main ingredient.
Jaggery has also been used as an ingredient in ayurvedic systems of medicine, as it has many protiens , minerals and vitamins as well as higher iron contents than white sugar. It is said that it has purification properties and regulats the liver.
Jaggery is healthier than refined sugar as it releases into the blood slowly, and it it for this reason that Mahatma Ghandi used it in his own goat milk diet.
